Curry dishes have become a favorite to cook and to be served at home. Today we had in-laws visiting. So we roll out one of our curry dishes – Veggies and dried squid curry stew.
- Veggies – Squash, string beans and aubergine
- Herbs – Spring onions, ginger and turmeric
- Meat – Bite-sized pieces of dried squid cut and fried
The secret to this type of dish is to have access to authentic curry powder. I found out that our local version is more yellow ginger powder than real curry so we end up with a yellowed dish. so we make sure we have on the kitchen shelve Ayam brand curry powder from Malaysia.
Innovation is a rule in my kitchen. So instead of the usual coconut milk, we use evaporated milk. Gives you that creamy taste and none of the nutty smell.
